Pulque shotgun metagenome

Pulque is a traditional non-distilled alcoholic beverage produced by the fermentation of the sap extracted from various species of Agavaceae. The aim is to obtain a description of the microorganisms involved in pulque fermentation and their interactions in order to support the maintenance of traditional and artisanal practices, the design of the starter culture, the improvement of sensorial quality and the microbial safety control in the final product.普逵酒（Pulque）是一种以龙舌兰科（Agavaceae）多个物种的汁液经发酵制得的传统非蒸馏酒精饮料。本研究旨在解析普逵酒发酵过程中涉及的微生物类群及其相互作用，以期为传统手工酿造工艺的传承、发酵剂（starter culture）的设计开发、感官品质的优化以及最终产品的微生物安全管控提供支撑。
