Plant protein adsorption at oil-water interfaces: Collection of literature interfacial pressure data

Collection of literature data on plant protein adsorption at oil-water interfaces. Compiled interfacial pressure data for pea, soy, chickpea, lentil, faba bean, wheat, and microalgae proteins with information on used protein fraction, concentration, and measuring conditions (pH, ionic strength). Special focus on the used oil subphase and initial and final interfacial tension data for combined plotting by alternate subphase tensiometry (AST).本数据集为油水界面植物蛋白吸附相关的文献资料合集。汇编涵盖豌豆、大豆、鹰嘴豆、小扁豆、蚕豆、小麦及微藻蛋白的界面压力数据，同时附带所用蛋白组分、蛋白浓度及测试条件（pH值、离子强度）等相关信息。本数据集特别关注所用油相子相，并包含通过交替子相张力法（Alternate Subphase Tensiometry, AST）联合绘图所需的初始与最终界面张力数据。
