\tThe dataset consists of results of various experiments carried out for screening and isolation of fructophilic lactic acid bacteria capable of potential probiotic properties such as tolerance to acid and simulated gastric juice, resistance to bile salt, antagonistic properties, antibiogram, haemolytic activity, characterization of fructophilic lactic acid bacteria and its suitability for commercial applications. In the present investigation, 13 fructophilic lactic acid bacterial strains were isolated from the ecological niches such as flowers and seeds.Among these strains, a potent fructophilic strain Fructobacillus fructosus MCC 3996 was isolated and selected for further studies since it appeared to be the best potential probiotic candidate. This isolate was characterized based on biochemical and cultural characteristics. Its identification has been confirmed by using 16S rRNA sequencing. The nutritional characteristics and incubation conditions for maximum fructophilicity was optimized. SDS-PAGE study demonstrated the presence of S-layer proteins obtained from the F. fructosus MCC 3996. Besides this, the strain showed the high free radical scavenging activity of F. fructosus MCC 3996 using DPPH and ABTS assay. Viability among the storage at 4 suggests the suitability of strain as a promising probiotic candidate for application in the food industry. Furthermore, it exhibited higher degrees of in vitro cholesterol assimilation in broth and showed a significant anti-hyperlipidemic effect (in vivo) in Swiss albino mice model. The application of F. fructosus in probioticated apple juice was also studied which found greater survival (7.60 ± 0.11 log10 cfu/mL), acceptable colour, aroma, and turbidity was achieved during refrigerated storage at 4 , up to 28 days.
