Study on weakening ethanol synthesis capacity of saccharomyces cerevisiae

In this study, to reduce the alcohol content in wine industry, a S. cerevisiae strain with weakened ethanol production capacity was obtained utilizing gTME technolgy. Transcriptome and metabolome analysis were conducted to study the metabolism of regulation of the mutant strain.

本研究为降低葡萄酒产业的酒精含量，利用gTME技术获得了一株乙醇合成能力减弱的酿酒酵母（S. cerevisiae）菌株。通过转录组（transcriptome）与代谢组（metabolome）分析，对该突变菌株的代谢调控机制开展了研究。
