不同热风干燥和预处理条件下香菇干燥前后多糖、总酚、黄酮等含量变化数据以及水分变化模型等数据。含有不同温度条件下样品编号、采集地、采集部位、采集人、采集单位、采集时间、样品干燥特性、多糖、酚类物质等营养指标,不同预处理方式对香菇品质的影响。
This dataset contains data on changes in the contents of polysaccharides, total phenols, flavonoids and other nutritional components of Lentinus edodes (shiitake mushrooms) before and after drying under various hot air drying and pretreatment conditions, as well as moisture change models and related datasets. It also includes detailed sample information such as sample ID, collection location, collection part, collector, collecting institution, collection time, sample drying characteristics, and various nutritional indicators including polysaccharides and phenolic substances under different temperature conditions, as well as data reflecting the impact of different pretreatment methods on the quality of shiitake mushrooms.
