青蟹（肉）铝质量安全检测数据

本数据主要用于监测三门青蟹（肉）铝指标的变化情况，用于监管部门加强对三门青蟹养殖经营过程的监管。1.样品来源：本项目抽检的青蟹全部来源于三门县流通环节市场主体经营的青蟹，检测部位是肉。 2.数据检测：青蟹样品经处理并取出蟹肉，经消解后，由电感耦合等离子体质谱仪测定，以铝元素特定质量数定性，采用外标法，以铝元素质谱信号与内标元素质谱信号的强度比与铝元素的浓度成正比进行定量分析。 3.数据判定：铝含量的计算，x=(ρ-ρ0)×v×f/m。试样铝含量，单位为毫克每千克或毫克每升(mg/kg或 mg/L)；ρ试样溶液中被测元素质量浓度，单位为毫克每升(mg/L)；ρ0试样空白液中被测元素质量浓度，单位为毫克每升(mg/L)；V试样消化液定容体积，单位为毫升（ml）；f试样稀释倍数；m试样称取质量或移取体积，单位为克或毫升(g或 ml)。计算结果保留三位有效数字。铝在食品安全国家标准《食品中污染物限量》（GB2762-2017）为安全指标，三门青蟹中铝限量标准是不大于0.1 mg/kg，超过0.1 mg/kg则判定该批次不合格。 4.数据应用：通过抽检数据分析研判，对通过抽检发现的不合格率较高区域，加强该区域水质、土壤的检测以及养殖过程的监管，提升三门青蟹质量安全水平。

This dataset is primarily used to monitor changes in aluminum content in the meat of Sanmen mud crabs, to help regulatory authorities strengthen supervision over the breeding and operation processes of Sanmen mud crabs.
1. Sample Source: All crab samples collected in this project are sourced from crabs sold by market entities in the circulation sector of Sanmen County, with the tested part being the crab meat.
2. Data Detection: After the crab samples are processed and their meat is extracted, the samples are digested and then determined via inductively coupled plasma mass spectrometry (ICP-MS). Qualitative analysis is conducted using the specific mass number of aluminum, while quantitative analysis adopts the external standard method: the intensity ratio of the mass spectrometric signal of aluminum to that of the internal standard element is proportional to the concentration of aluminum.
3. Data Judgment: The calculation formula for aluminum content is x=(ρ-ρ₀)×v×f/m. The aluminum content of the test sample is expressed in milligrams per kilogram or milligrams per liter (mg/kg or mg/L):
- ρ: Mass concentration of the detected element in the sample solution, unit: mg/L
- ρ₀: Mass concentration of the detected element in the sample blank solution, unit: mg/L
- V: Constant volume of the digested sample solution, unit: ml
- f: Dilution multiple of the sample
- m: Mass of the weighed test sample or volume of the pipetted sample, unit: g or ml
The calculation result shall be retained to three significant figures. Aluminum is a safety indicator stipulated in the National Food Safety Standard Limits of Contaminants in Foods (GB2762-2017). The allowable limit of aluminum in Sanmen mud crabs is no more than 0.1 mg/kg; any batch with aluminum content exceeding this value shall be judged as unqualified.
4. Data Application: Through the analysis and research of spot check data, for regions with a relatively high unqualified rate identified via spot checks, strengthen the detection of local water quality and soil as well as the supervision of the breeding process, so as to improve the quality and safety level of Sanmen mud crabs.
