A rapid detection study targeting duck tongues in the circulation links of agricultural product markets in Pingyang County was carried out, with nitrite testing conducted on the samples, to provide factual evidence for qualification rate evaluation, and offer technical support and reference for government supervision and consumer purchasing decisions. 1. Data Collection: Duck tongue samples were randomly collected from agricultural product markets across the entire county for nitrite content analysis and investigation. 2. Data Testing: The national standard GB 5009.33-2016 National Food Safety Standard - Determination of Nitrite and Nitrate in Foods was adopted to perform nitrite testing on the duck tongue samples, obtaining relevant test data. 3. Data Processing: The nitrite-related test results were screened out to evaluate the unqualified rate. The overall unqualified rate of all samples = total number of unqualified samples / total number of collected samples; The unqualified rate of samples from a specific market (e.g., unqualified rate of samples from Market AC) = number of unqualified samples from the specific market / total number of samples from that market. Through analysis of the overall unqualified rate of all samples, the current status of nitrite in duck tongues can be understood; by analyzing the unqualified rates of samples from different markets, markets with relatively high unqualified rates can be identified, providing data references for consumers' healthy diet, and offering guidance for determining key detection targets in subsequent work.
