Based on standardized food sampling and laboratory testing, and processing the original test data via standard methods, the content data of dehydroacetic acid and its sodium salts (calculated as dehydroacetic acid) in food samples are obtained. The qualification of samples is evaluated according to national food safety standards to determine whether the dehydroacetic acid content in foods meets the requirements. This dataset can provide scientific basis for food production entities to regulate the use of food additives during food production, and for regulatory authorities to carry out food safety supervision. 1. Sample Testing: Organize sampling and sample preparation in accordance with relevant specifications. Accurately weigh 2.5000 g of homogenized food sample, conduct pretreatment and instrumental analysis in accordance with "National Food Safety Standard - Determination of Dehydroacetic Acid in Foods" (GB 5009.121-2016, Method 2, Liquid Chromatography), and record the sample concentration C (μg/mL). 2. Data Processing: Calculate the detection result X (g/kg) of dehydroacetic acid content in the sample using the formula: X = (C × V × n) / (m × 1000), where C (μg/mL) is the sample concentration, V (mL) is the constant volume, n is the dilution multiple, and m (g) is the sample weight. 3. Qualification Rate Calculation: Conduct qualification assessment on samples in accordance with "National Food Safety Standard - Use of Food Additives" (GB 2760-2014), and calculate the qualification rate (%) = (number of qualified samples / number of tested samples) × 100%. 4. Data Application: Food production entities can use the dehydroacetic acid content test data of foods, compare with national food safety standards, regulate the use of food additives in the production process, and ensure that products leaving the factory are qualified; food regulatory authorities can carry out precise food safety supervision and risk communication based on the test data and qualification rate statistics.
