通过对酱油中的铵盐含量进行检测,可以评估酱油的品质和风味,判断酱油的是否符合食品安全标准,本数据对酱油的铵盐含量作出检测,为企业生产及政府食品监管做出参考,为了解酱油的口感提供参考依据。1、产品检测:对酱油进行抽样检测,每次检测样本质量约2ml,然后用凯氏定氮仪进行分析,通过检测计算出铵盐含量并记录;2、数据处理:铵盐含量=(标准溶液的体积-空白体积)*标准浓度*0.017(铵盐比例系数)/试样体积*100%,根据铵盐含量判断酱油品质;3、对比GB5009.234-2016(食品安全国家标准食品中铵盐的测定)标准,判断样品中铵盐含量是否达到国家标准,对未达标产品进行提示;4、通过对酱油中铵盐含量的检验检测,可以为企业生产及产品质量做出有效参考,为政府食品监管及消费者选择提供依据。
Detecting the ammonium salt content in soy sauce enables evaluation of soy sauce quality and flavor, as well as verification of its compliance with food safety standards. This dataset conducts tests on the ammonium salt content of soy sauce, providing references for enterprise production, government food supervision, and a reference basis for understanding the taste profile of soy sauce.
1. Product Testing: Perform sampling tests on soy sauce, with each test sample having a volume of approximately 2 mL. Analyze the samples using a Kjeldahl nitrogen analyzer, calculate and record the ammonium salt content via detection.
2. Data Processing: Ammonium salt content = (Volume of standard solution - Blank volume) × Standard concentration × 0.017 (ammonium salt proportional factor) / Sample volume × 100%. Judge the quality of soy sauce based on the detected ammonium salt content.
3. Compliance Check: Compare the test results with the GB 5009.234-2016 (National Food Safety Standard: Determination of Ammonium Salts in Foods) standard to determine whether the ammonium salt content of the samples meets the national standard, and issue warnings for non-compliant products.
4. Application Value: The inspection and testing of ammonium salt content in soy sauce can effectively provide references for enterprise production and product quality control, as well as support for government food supervision and consumer purchasing decisions.
