基于规范的食品抽(取)样和实验室检测,并按照标准方法处理原始检测数据,得到食品样本中甜蜜素(以环己基氨基磺酸计)含量数据,依据食品安全国家标准对样品进行合格性评价,判定食品中甜蜜素含量是否达标。该数据可为食品生产主体在食品生产过程中规范食品添加剂使用行为,以及监管部门开展食品安全监管提供科学依据。1.样品检测:依据相关工作规范组织抽样及制样,精确称取均质食品试样(固体样品2.50g,液体样品25.00g),按照《食品安全国家标准 食品中环己基氨基磺酸钠的测定》(GB 5009.97-2016 第一法 气相色谱法)进行前处理及上机检测,读取样品浓度C(mg/mL)数据。2.数据处理:根据计算式计算样品中甜蜜素含量检测结果X(g/kg)=(C×V×n)/(m×1000),其中,C(mg/mL)为样品浓度,V(mL)为定容体积,n为稀释倍数,m(g)为取样量。3.合格率计算:依据《食品安全国家标准 食品添加剂使用标准》(GB 2760-2014)对样品进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:食品生产主体可根据食品中甜蜜素含量检测数据,对照食品安全国家标准,规范生产过程中食品添加剂使用行为,确保出厂产品合格;食品监管部门根据检测数据及合格率统计数据精准开展食品安全监管和风险交流。

Based on standardized food sampling and laboratory testing, with raw test data processed using standardized methods, the content data of cyclamate (calculated as cyclohexylsulfamic acid) in food samples is derived. Compliance assessment is performed against national food safety standards to determine whether the cyclamate content in foods meets the regulatory requirements. This dataset can provide scientific support for food production entities to standardize the use of food additives during food production, and for food safety regulatory authorities to carry out food safety supervision work. 1. Sample Testing: Sampling and sample preparation are conducted in accordance with relevant working regulations. Weigh accurately the homogenized food test sample (2.50 g for solid samples, 25.00 g for liquid samples). Perform pretreatment and instrumental analysis according to "Determination of Sodium Cyclamate in Foods" (National Food Safety Standard GB 5009.97-2016, First Method: Gas Chromatography), and record the sample concentration C (mg/mL). 2. Data Processing: The detection result of cyclamate content X (g/kg) in the sample is calculated via the formula: X = (C × V × n) / (m × 1000), where C (mg/mL) is the sample concentration, V (mL) is the constant volume, n is the dilution factor, and m (g) is the sample mass. 3. Qualification Rate Calculation: Conduct compliance assessment on the samples according to "Food Additive Use Standards" (National Food Safety Standard GB 2760-2014), and calculate the qualification rate (%) = (number of qualified samples / number of tested samples) × 100%. 4. Data Application: Food production entities can standardize the use of food additives during the production process by referring to the cyclamate content detection data and national food safety standards, to ensure that ex-factory products meet the required standards; food safety regulatory authorities can carry out targeted food safety supervision and risk communication based on the detection data and qualification rate statistics.
