对瑞安市各乡镇餐馆对各类食品随机开展抽检,从而为合格率评价提供事实依据,为政府监管、消费者购买提供参考和技术支撑。1.数据采集:在全市乡镇各类餐馆随机抽取食品,对其脱氢乙酸及其钠盐检测结果数据展开分析。2.数据检测:GB 2760-2014《食品安全国家标准 食品添加剂使用标准》国家标准,对餐馆食品进行检测获得相关数据。3.数据处理:筛选出所有问题项检测结果,进行不合格率的评估。全部样品不合格率=全部样品不合格数/全部样品总数;具体食品大类不合格率(如:餐饮食品不合格率)=具体食品大类不合格数/具体食品大类总数。通过对全部样品不合格率的分析,了解全市乡镇餐馆脱氢乙酸及其钠盐现状,通过对不同食品大类不合格率的分析,了解哪些食品大类的不合格率比较高,为消费者的健康饮食提供数据参考,也为后续工作中确定需要重点检测对象提供借鉴。
This dataset is developed based on random spot sampling and inspection of various foods in restaurants across towns and townships of Rui'an City, aiming to provide factual basis for qualification rate assessment, as well as references and technical support for government supervision and consumer purchasing. 1. Data Collection: Randomly collect food samples from various restaurants in the urban towns and townships, and analyze the test result data of dehydroacetic acid and its sodium salts. 2. Data Testing: Perform tests on restaurant food samples in accordance with the National Food Safety Standard of China: Hygienical Standard for the Use of Food Additives (GB 2760-2014) to obtain relevant test data. 3. Data Processing: Screen out all test results with non-conforming items, and evaluate the non-conformity rates. The overall non-conformity rate of all samples = total number of non-conforming samples / total number of all samples; The non-conformity rate of a specific food category (e.g., non-conformity rate of catering foods) = number of non-conforming samples in the specific food category / total number of samples in the specific food category. Through analysis of the overall non-conformity rate of all samples, the current status of dehydroacetic acid and its sodium salts in restaurants across Rui'an's towns and townships can be clarified. Through analysis of the non-conformity rates of different food categories, food categories with relatively high non-conformity rates can be identified, providing data references for consumers to adopt healthy dietary habits, and offering guidance for determining key inspection targets in subsequent work.
