Interfacial tension measurements between oil and aqueous suspensions of isolated extracellular polymeric substances (EPS)

Using a pendant drop tensiometer the interfacial tensions between an oil pendant drop and an aqueous suspension of extracellular polymeric substances (EPS) were measured. Images were taken of the pendant drop over time at 2k by 2k resolution for highly resolved oil-water interfaces. Both equilibrium interfacial tension and transient interfacial tension were measured. EPS was isolated from bacteria Sagitulla and Roseobacter. This dataset contains tif images of interfacial tension measurements between oil and suspensions of purified EPS from Sagitulla stellata and Roseobacter species.
