磺胺类残留是水产品的主要安全问题之一,水产品中磺胺类残留也常有检出,磺胺类药物在水产养殖中主要作为广谱抗菌剂使用,通过抑制细菌叶酸代谢有效防治多种细菌性疾病。如果长期食用磺胺类残留产品会引起过敏反应、神经系统毒性和造血系统抑制等不良反应,还可能导致急性磺胺中毒,出现呼吸困难、肌肉痉挛、皮疹等严重症状。因此通过对水产品中磺胺类残留的检测分析,能够进一步了解水产品各品类磺胺类残留情况和风险情况。通过合格率了解易超标的风险品种,通过不合格占比了解年度重点监管品类,从而加强对水产品磺胺类残留情况的关注,为养殖业合理使用药品具有指导意义,也为监管单位进行磺胺类残留专项监管提供数据支持。1、数据采集:根据要求采集水产样品并进行样品制备,依据检测方法进行定量分析,获得检测结果值。2、数据处理:通过定量分析获得结果值,依据‌GB 29694-2013 《食品安全国家标准》设定标准值,当结果值≤标准值时,判定合格;否则判定不合格;该细类当年合格率=该细类当年检测合格批次数A/该细类当年检测批次N*100%,保留两位小数;总不合格数M为当年水产品磺胺类不合格数之和,该细类不合格占比=该细类不合格数X/总不合格数M*100%,保留两位小数;该品种不合格占比=该品种不合格数Y/总不合格数M*100%,保留两位小数。当该细类当年合格率≥98%时,风险评价=LR,当98%>该细类当年合格率≥95%时,风险评价=MR,当该细类当年合格率<95%时,风险评价=HR。3、数据应用:对水产品中磺胺类残留进行检测分析,可以了解不同品类磺胺类残留情况,通过风险评价了解易超标的风险品种,通过不合格占比了解年度监管品类不合格总体情况,从而加强对水产品磺胺类残留情况的关注,为养殖业合理使用药品具有指导意义,也为监管单位进行磺胺类残留专项监管提供数据支持。

Sulfonamide residues are one of the primary food safety concerns for aquatic products, and such residues are frequently detected in these products. Sulfonamide drugs are primarily utilized as broad-spectrum antibacterial agents in aquaculture, effectively preventing and treating multiple bacterial diseases by inhibiting bacterial folic acid metabolism. Long-term consumption of products with sulfonamide residues may induce adverse reactions including allergic reactions, neurotoxicity, and hematopoietic system suppression, and can even cause acute sulfonamide poisoning, manifesting as severe symptoms such as dyspnea, muscle spasms, and skin rashes. Therefore, conducting detection and analysis of sulfonamide residues in aquatic products can further clarify the residue status and risk levels of sulfonamides across various aquatic product categories. By examining the qualified rate, high-risk varieties prone to exceeding standard limits can be identified; by analyzing the non-compliance rate, key annual supervised categories can be determined. This work enhances attention to sulfonamide residue issues in aquatic products, provides guidance for the rational use of pharmaceuticals in aquaculture, and offers data support for regulatory authorities to carry out specialized supervision of sulfonamide residues. 1. Data Collection: Aquatic samples are collected and prepared as required, followed by quantitative analysis in accordance with specified detection methods to obtain test result values. 2. Data Processing: Standard values are set based on GB 29694-2013 National Food Safety Standard using the quantitative analysis results. A test result is deemed compliant if it is less than or equal to the standard value; otherwise, it is classified as non-compliant. The annual qualified rate of a subcategory = (number of compliant batches A of the subcategory in the current year / total number of tested batches N of the subcategory in the current year) × 100%, rounded to two decimal places. The total non-compliant count M is the sum of non-compliant aquatic product samples with sulfonamide residues in the current year. The non-compliance rate of a subcategory = (number of non-compliant samples X of the subcategory / total non-compliant count M) × 100%, rounded to two decimal places. The non-compliance rate of a specific variety = (number of non-compliant samples Y of the variety / total non-compliant count M) × 100%, rounded to two decimal places. The risk assessment is defined as LR when the annual qualified rate of the subcategory ≥ 98%, MR when 98% > annual qualified rate ≥ 95%, and HR when the annual qualified rate of the subcategory < 95%. 3. Data Application: Testing and analyzing sulfonamide residues in aquatic products can help understand the sulfonamide residue status across different product categories. The risk assessment identifies high-risk varieties prone to exceeding standard limits, while the non-compliance rate reveals the overall non-compliance situation of key annual supervised categories. This strengthens attention to sulfonamide residue issues in aquatic products, provides guidance for the rational use of pharmaceuticals in aquaculture, and offers data support for regulatory authorities to conduct specialized supervision of sulfonamide residues.
