Data of analysis of the influence of microparticle morphology on the qualitative state of spray-dried fruit with the use of deep learning

The dataset includes images of blackcurrant powders obtained through dehumidified air-assisted spray drying. Morphology of microparticles is characterized by datasets in the form of microscopic images obtained through Scanning Electron Microscopy (SEM). Individual sets of images describing currant powders with the smallest (30%) and the largest (50%) proportion and the selected carrier type were deposited.
