基于规范的食品抽样和实验室检测,依据标准方法处理原始检测数据,获得所检食品样本中过氧化值含量数据,通过比对食品安全国家标准,对样品进行合格性评价,判定食品中过氧化值含量是否达标。该数据可为食品生产主体掌握食品质量状况、规范食品生产行为提供科学依据,并为监管部门开展食品安全监管提供执法证据。1.样品检测:规范抽取样品及制样,精确称取2.0000g试样,按照GB 5009.227-2016《食品安全国家标准 食品中过氧化值的测定(第一法 滴定法)》中方法进行处理及滴定检测,得到样品滴定体积V(mL)数据。2.数据处理:根据计算式计算样品中过氧化值含量检测结果X(g/100g)=(V×0.1269××C×100)/m,其中,V(mL)滴定体积,C为硫代硫酸钠标准滴定液浓度(mol/L),m为样品量(g)。3.合格率计算:依据产品类别相应的食品安全国家标准对样品进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:食品生产主体可根据食品中过氧化值检测数据,了解食品质量情况,进而规范生产工艺及产品储运管理,食品监管部门根据检测数据及合格率统计数据精准开展食品安全监管和风险交流。

Based on standardized food sampling and laboratory testing, raw test data are processed following standard operating procedures to obtain peroxide value data for tested food samples. The conformity of each sample is evaluated by comparing the test results with national food safety standards, to determine whether the peroxide value content in the food meets the regulatory requirements. This dataset provides scientific basis for food producers to master food quality status and standardize production behaviors, as well as law enforcement evidence for regulatory authorities to carry out food safety supervision. 1. Sample Testing: Samples are collected and prepared in accordance with standardized procedures. Exactly 2.0000 g of test sample is accurately weighed, then processed and titrated according to the method specified in GB 5009.227-2016 "National Food Safety Standard - Determination of Peroxide Value in Foods (First Method: Titration)", to obtain the titration volume V (mL) of the sample. 2. Data Processing: The peroxide value detection result X (g/100g) of the sample is calculated via the formula: X = (V × 0.1269 × C × 100) / m, where V is the titration volume (mL), C is the concentration of the standard sodium thiosulfate titrant (mol/L), and m is the mass of the test sample (g). 3. Qualified Rate Calculation: The conformity of samples is evaluated based on the corresponding national food safety standards for different product categories, and the qualified rate (%) is calculated as: Qualified Rate (%) = (Number of Qualified Samples / Total Number of Tested Samples) × 100%. 4. Data Application: Food producers can understand food quality status based on the peroxide value test data, and further standardize production processes and product storage and transportation management. Food regulatory authorities can conduct targeted food safety supervision and risk communication based on the test data and qualified rate statistics.
