甜蜜素（以环已基氨基磺酸钠计）是属无营养的甜味剂，主要用于增加食品的口感，其甜度是蔗糖的30~40倍，过量使用可能会对身体健康造成危害。本数据主要用于监测本公司内部销售环节绿豆糕甜蜜素含量情况。通过检测数据， 对曲绿豆糕甜蜜素含量进行安全性评价，为政府部门监管提供依据，避免因甜蜜素超标使用而产生食品安全问题，进一步保障消费者的食品安全。1、样品来源：本项目抽检的绿豆糕全部来源于公司内部生产、流通环节市场主体销售的产品。 2、数据检测：样品经前处理后，根据GB5009.97-2016第二法检测原则，利用液相色谱仪进行检测，得出数据。3、数据判定：甜蜜素量的计算，X=(C x V) /( M x 1000)。X为试样甜蜜素含量，单位为g/kg；C为测得值，单位μg/mL；V为样品溶液定量体积，单位mL；M为试样质量，单位g；绿豆糕中甜蜜素含量标准要求为≤0.5g/kg。 4、数据应用：通过抽检数据分析研判，我们可以判断曲绿豆糕中甜蜜素含量是否符合食品生产标准，避免因甜蜜素含量超标而产生的食品安全问题，为监管提供依据。
Sodium cyclamate (calculated as sodium cyclohexylsulfamate) is a non-nutritive sweetener mainly used to enhance the taste of food, with a sweetness 30 to 40 times that of sucrose. Excessive use may pose risks to human health. This dataset is primarily used to monitor the sodium cyclamate content of mung bean cakes in the sales links within the company. Based on the test data, safety evaluations of the sodium cyclamate content in mung bean cakes can be conducted, providing a basis for government regulatory departments to avoid food safety issues caused by excessive sodium cyclamate use, and further safeguarding consumer food safety. 1. Sample Source: All mung bean cakes sampled in this project are sourced from products sold by market entities in the production and circulation links within the company. 2. Data Detection: After sample pretreatment, the samples are tested using a liquid chromatograph in accordance with the principles of the Second Method specified in GB 5009.97-2016, and the test data are obtained. 3. Data Judgment: The calculation formula for sodium cyclamate content is X = (C × V) / (M × 1000). Here, X refers to the sodium cyclamate content in the test sample, with the unit of g/kg; C is the measured value, with the unit of μg/mL; V is the fixed volume of the sample solution, with the unit of mL; M is the mass of the test sample, with the unit of g. The standard limit for sodium cyclamate content in mung bean cakes is ≤ 0.5 g/kg. 4. Data Application: Through analysis and evaluation of the sampling test data, we can determine whether the sodium cyclamate content in mung bean cakes complies with food production standards, avoid food safety issues caused by excessive sodium cyclamate content, and provide a basis for regulatory work.
