Screening and identification of a high ACE inhibitory activity Lactobacillus strain and optimization of its culture conditions

Lactobacillus is intestinal probiotics with the frequent observation of high angiotensin-I-convertingen enzyme (ACE) inhibitory activity in its fermented milk. We selected 5 strains from sediments of the Bohai Sea, and tried to optimize fermentation conditions of one strain through orthogonal tests. It provides a broader source for the development of lactic acid bacteria with high-yield ACE inhibitory peptide and antihypertensive products.
