对瑞安市各学校食堂中的蔬菜随机开展抽检，从而为合格率评价提供事实依据，为政府监管、消费者购买提供参考和技术支撑。1.数据采集：在全市各学校食堂中对蔬菜开展抽检，对其检测结果数据展开分析。2.数据检测：GB 2762-2017《食品安全国家标准 食品中污染物限量》、GB 2763-2021《食品安全国家标准 食品中农药最大残留限量》国家标准，对蔬菜进行检测获得相关数据。3.数据处理：筛选出所有问题项检测结果，进行不合格率的评估。全部样品不合格率=全部样品不合格数/全部样品总数；具体食品细类不合格率（如：餐饮食品不合格率）=具体食品细类不合格数/具体食品细类总数。通过对全部样品不合格率的分析，了解全市各学校食堂中蔬菜食品安全现状，通过对不同蔬菜细类不合格率的分析，了解哪些蔬菜细类的不合格率比较高，为消费者的健康饮食提供数据参考，也为后续工作中确定需要重点检测对象提供借鉴。

Random spot checks on vegetables in school canteens across Rui'an City were conducted to provide factual basis for qualification rate evaluation, as well as reference and technical support for government supervision and consumer purchasing.

1. Data Collection: Random spot checks on vegetables were carried out in school canteens across the city, and the resulting detection data were analyzed.

2. Data Detection: Vegetables were tested in accordance with the national standards GB 2762-2017 *National Food Safety Standard - Limits of Contaminants in Foods* and GB 2763-2021 *National Food Safety Standard - Maximum Residue Limits of Pesticides in Foods*, and relevant detection data were obtained.

3. Data Processing: All detected non-conforming items were screened out for non-conformity rate assessment. The calculation formulas are as follows:
Total non-conformity rate of all samples = Number of non-conforming samples / Total number of all samples;
Non-conformity rate of specific food subcategories (e.g., non-conformity rate of catering foods) = Number of non-conforming items in the specific food subcategory / Total number of the specific food subcategory.

By analyzing the total non-conformity rate of all samples, the current status of vegetable food safety in school canteens across Rui'an City can be clarified. By investigating the non-conformity rates of different vegetable subcategories, we can identify which vegetable subcategories have relatively high non-conformity rates, providing data reference for consumers' healthy diet and also offering a reference for determining key detection objects in subsequent work.
