基于规范的食品抽样和实验室检测,并按照标准方法处理原始检测数据,得到食品样本中苯甲酸及其钠盐(以苯甲酸计)含量数据,依据食品安全国家标准对样品进行合格性评价,判定食品中防腐剂苯甲酸含量是否达标,并可获得食品苯甲酸合格率数据。该数据可为食品生产主体规范食品生产行为及监管部门开展食品安全监管提供科学依据。1.食品中苯甲酸含量检测:规范抽取样品,精确称取2g均质食品试样,按照《GB 5009.28-2016 食品安全国家标准 食品中苯甲酸、山梨酸和糖精钠的测定》进行前处理及上机检测,得到样品浓度C(mg/L)数据。2.数据处理:根据计算式计算样品中苯甲酸含量检测结果X(g/kg)=(C×V×n)/(m×1000),其中,C(mg/L)为样品浓度,V(mL)为定容体积,n为稀释倍数,m(g)为取样量。3.合格率计算:依据GB 2760-2014《食品安全国家标准 食品添加剂使用标准》对样品进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:食品生产主体可根据食品中苯甲酸含量检测数据规范生产过程中食品添加剂使用行为,食品监管部门根据检测数据及合格率统计数据高效开展食品安全监管和风险交流。

Based on standardized food sampling and laboratory testing, with raw test data processed via standard methods, content data of benzoic acid and its sodium salts (calculated as benzoic acid) in food samples are obtained. Conformity assessment of the samples is conducted in accordance with national food safety standards to determine whether the content of the preservative benzoic acid in foods meets the requirements, and the qualified rate of benzoic acid in foods can be derived. This dataset can provide scientific basis for food production entities to standardize their food production practices and for regulatory authorities to carry out food safety supervision. 1. Detection of benzoic acid content in foods: Samples are collected in a standardized manner, 2 g of homogeneous food test sample is accurately weighed, and pretreatment and instrumental testing are performed in accordance with GB 5009.28-2016 National Food Safety Standard - Determination of Benzoic Acid, Sorbic Acid and Saccharin Sodium in Foods, to obtain the sample concentration data C (mg/L). 2. Data processing: The test result X (g/kg) of benzoic acid content in the sample is calculated via the formula: X = (C × V × n) / (m × 1000), where C (mg/L) is the sample concentration, V (mL) is the fixed volume, n is the dilution multiple, and m (g) is the sample mass. 3. Qualified rate calculation: Conformity assessment of the samples is carried out in accordance with GB 2760-2014 National Food Safety Standard - Standards for the Use of Food Additives, and the qualified rate (%) is calculated as: (number of qualified samples / number of tested samples) × 100%. 4. Data application: Food production entities can standardize the use of food additives during the production process based on the test data of benzoic acid content in foods, while food regulatory authorities can efficiently carry out food safety supervision and risk communication based on the test data and qualified rate statistics.
