本数据主要用于监测三门青蟹（肉）铬指标的变化情况，用于监管部门加强对三门青蟹养殖经营过程的监管。1、样品来源于三门县县内养殖以及流通市场上销售的青蟹，样本部位为肉。
2、数据检测：试样经消解处理后，采用石墨炉原子吸收光谱法，在３５７．９ｎｍ处测定吸收值在一定浓度范围内其吸收值与标准系列溶液比较定量。
3、数据判定：铬的含量计算，试样中铬含量：X=( C-C0 ) x V /(m×1000 ) 。试样中铬的含量，单位为毫克每千克(mg/kg)；C-测定样液中铬的含量，单位为纳克每毫升(ng/mL)；C0-空白液中铬的含量，单位为纳克每毫升(ng/mL)；V-样品消化液的定容总体积，单位为毫升(mL)；m-样品称样量，单位为克(g)；1000-换算系数。当分析结果≥1mg/kg时，保留三位有效数字；当分析结果1mgkg时，保留两位有效数字。指标要求为等于小于2.0 mg/kg，如不符合标准规定的，则判定该批产品不合格。

This dataset is primarily used to monitor the changes in chromium levels in the meat of Sanmen mud crabs, to assist regulatory authorities in strengthening the supervision of the breeding and circulation processes of Sanmen mud crabs.
1. Sample Source: Samples are collected from crabs bred within Sanmen County and those sold in local circulation markets, with the crab meat as the sampling portion.
2. Detection Procedure: After digestion treatment, the test sample is analyzed via graphite furnace atomic absorption spectrometry at a wavelength of 357.9 nm. Quantification is performed by comparing the absorbance value of the sample with that of the standard series solution within a specific concentration range.
3. Data Evaluation: The chromium content in the sample is calculated using the formula: $X = frac{(C - C_0) imes V}{m imes 1000}$. The unit of chromium content in the sample is milligrams per kilogram (mg/kg). Detailed explanations of the variables are as follows: C is the chromium content in the test solution, with the unit of nanograms per milliliter (ng/mL); C0 is the chromium content in the blank solution, with the unit of ng/mL; V is the total constant volume of the digested sample solution, with the unit of milliliter (mL); m is the sample weighing amount, with the unit of gram (g); 1000 is the unit conversion coefficient. Regarding the retention of significant digits: retain three significant digits when the analytical result is ≥1 mg/kg; retain two significant digits when the analytical result is <1 mg/kg. The allowable chromium content limit is ≤2.0 mg/kg. A batch of products is judged as unqualified if its chromium content fails to meet this standard.
