Medium temperature Daqu

In this study, we combined metagenomic sequencing with physicochemical analysis to compare the high-temperature, medium-temperature, pile fermentation, and fermented grains, to reveal the role of functional microorganism in traditional Baijiu fermentation. When medium-temperature and high-temperature mixed Daqu (medium-high-temperature mixed Daqu) was used as the fermentation starter, we explored the changes of microbial colonies and functions during the Baijiu fermentation process.
