The brewing yeast Saccharomyces pastorianus (synonym: Saccharomyces carlsbergensis), also commonly known as lager yeast, is thought to be a natural polyploid hybrid between two Saccharomyces species: Saccharomyces bayanus and Saccharomyces cerevisiae. Its phenotypic and biologic characteristics are also similar to those species. Saccharomyces pastorianus is the most important industrial lager brewing yeast used in beer production.
